Mitch's Fantastic Barbecue Rub
(from Paul Kirk's Championship Barbecue Sauces)
the ingredients
- ¾ cup cane sugar
- ¼ cup light brown sugar
- 6 tablespoons celery salt
- ¼ cup seasoned salt
- ¼ cup onion salt
- 2 tablespoons garlic salt
- 1/3 cup paprika
- 2 tablespoons chili powder
- 2 tablespoons black pepper
- 1 tablespoon cayenne
- 1 teaspoon ground allspice
- 1 teaspoon MSG (optional)
- ½ teaspoon ground cloves
- ½ teaspoon ground bay leaf
the preparation
- Combine all of the ingredients in a sifter, and sift to blend well.
- Store in an airtight jar in the refrigerator for 2 to 3 weeks or in the freezer for up to 6 months.
the cooking
- Use this rub on beef, lamb, pork, chicken, or fish. Sprinkle it on heavily, and cook over indirect heat.
